What You Need
- 2 eggs beaten
- 1\2 cup self raising flour
- 1\2 cup cocoa ( or cacau powder)
- 1 ripe avocado blended
- 1 cup pureed sweet potato ( bake 25 mins in a covered dish, little bit of water in the bottom – peel off skin when cool and blend )
- 1 cup pureed or finely chopped dates ( soak in about 100mls boiling water , makes them go syrupy)
- 1/2 cup chopped walnuts
(You can add vanilla extract but Lauren didn’t – and they were fine!)
What You Do
- Preheat the oven to 200c
- Combine avocado, sweet potato, dates and eggs in a bowl.
- Sift together flour and cocoa.
- Fold in liquid mixture to flour mix and add the nuts.
- Grease a baking tin ( approx 30cm x 15 cm)
- Bake at 200 25mins, until just set
- They will continue to cook as they cool
They are really rich !
And pretty good for you too…
