Ridiculously Healthy and GORGEOUS
What you need:
- · 100g cranberries
- · 100g of sultanas
- · 100g of raisins
- · 1 apple
- · 1 1/2 tsp of ground cinnamon
- · 1/2 tsp of ground nutmeg
- · 1/2 tsp ground ginger
- · 2 oranges
- · tsp of vanilla bean paste/extract
(yes, you need this ^^^ it’s the only weird ingredient!)
- · 250g ground almonds
- · 200 g walnuts
- · 2 TBSP of coconut sugar or raw honey
- · 2 tbsp coconut oil
- · 1 egg
What you do:
The Filling
1. Preheat oven to 150ºC.
2. Zest and juice the oranges, place in a pan and put on a medium heat.
3. Cut up the apple into really small slices (discard stem)
4. Whack it in the pan with dried fruit, vanilla, 1/2 tsp each of ginger, cinnamon & nutmeg.
5. Simmer gently for 25 minutes. Don’t boil it, it makes it go icky.
6. Turn off the heat, transfer to a bowl and cool.
The Pastry:
7. Pulse the almonds & walnuts in a food processor until goes like flour,
8. Add honey/coconut sugar, 1 tablespoon of cinnamon, coconut oil and egg
9. Mix until a dough forms
(too dry? add a little water, too moist? Add more almonds)
10. Grease a muffin/cupcake tin with coconut oil.
11. Take a large tbsp of dough, push into the moulds covering the bottom &sides,
12. Leave enough room to put the mince in!
13. This mixture should probably make around 15 mince pies
14. Add in a little over 1 tbsp of mincemeat into each little pastry case.
15. With the left over pastry, roll between baking paper until it is 1/2 cm thick
16. Cut circles (by hand) big enough to cover the top of each pie
17. Place in the oven and bake for 25 minutes.
It’s rustic and homely! It’s not supposed to look all Marks and Spencers-ey.
