Chocolate Leftovers
Bake a leftover Easter Egg Chocolate Cake … or some other choc-based treat.
If you’re sick of the sight of chocolate (or find yourself grazing on the broken bits, then being mean to yourself about that) – let’s collect it up, make something with it – and draw a line under it as an act of self-improvement!
Personally, I don’t need an create things with chocolate
Obviously, any cake recipe that calls for chocolate, or even chocolate powder – can be substituted for chocolate broken up and melted in the microwave.
You might just need a little less liquid.
n.b. If a recipe calls for a bain Marie, it’s just showing off. It’s easier to melt it in the microwave – just check it every 20 seconds.
Here are my favourite things to do with leftover chocolate
Chocolate Fondue
Break up your chocolate eggs and melt them in a microwave-safe bowl. Add some cream, milk, or (or plant-based milk, ideally coconut) to thin it out.
Then dip your favorite fruits, marshmallows, biscuits and pretzels into the warm chocolate sauce.
If you’re really nice, you could even share this.
Bake Chocolate Chip Cookies
Chop/smash up your chocolate eggs and use them instead of chocolate chips in your favourite cookie recipe.
Here’s mine:
Ingredients
- 120 ml vegetable oil
- 1.5 mashed bananas
- 100 g sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 200g wholewheat or plain flour
- 100 g Ready Brek, oat flour or whizzed-up oats.
- 1 tsp baking soda
- 120 g broken-up chocolate
- 70 g chopped nuts, optional
Method
- Mix everything together, then dollop it onto a baking tray lined with baking parchment.
- Cook for 12-20 mins, depending on how big you make them.
- When it starts to smell biscuity and they go slightly brown, give them another couple of minutes then take them out and let them harden up as they cool.
note: All of these measurements are quite ‘ish’ so don’t stress if you have a little more or less of ingredients.
Make Proper Hot Chocolate.
I probably do this once a week as a we have a hot chocolate fiend in the house.
- Heat some milk or plant-based milk in a saucepan over medium-low heat. Oat milk is peak yumminess for this.
- Add some chopped chocolate eggs and whisk until melted and smooth.
- Optionally add some vanilla extract, cinnamon, nutmeg, or other spices for extra flavour.
- Pour into mugs and top with outrageous squirty cream or marshmallows if you like it
- If you have a child, don’t forget to squirt some cream into their mouth first.
It’s tradition.
Make Chocolate Bark
(Very cheffy)
- line a baking sheet with parchment paper or wax paper.
- melt some chocolate eggs in a microwave-safe bowl.
- spread the melted chocolate evenly over the baking sheet.
- go VIP by sprinkling some toppings over the chocolate; nuts, dried fruits, seeds, sweets, or sprinkles.
- refrigerate until set, then break into pieces
- definitely only eat a tiny bit, and don’t snaffle the whole lot with vanilla ice cream.
We’re not savages, darling.
Make Chocolate truffles.
- melt some chocolate eggs in a microwave-safe bowl.
- add some cream cheese (there is some FANTASTIC vegan cream cheese now… game-changer)
- mix well until smooth and creamy.
- refrigerate until firm, then roll into balls.
- Roll the ballsin cocoa powder, shredded coconut, chopped nuts, or sprinkles. Store in an airtight container in the refrigerator or freezer.
It’s almost worth the near-diabetic-level coma…
